All the flavours of your favourite Chipotle bowl — juicy spiced chicken, fluffy cilantro rice, black beans, corn and creamy guacamole — made at home in 25 minutes for under 500 calories.

🛒 Ingredients
- 500g (1.1 lb) boneless chicken thighs or breast
- 1.5 cups long grain white rice, rinsed
- 1 can (400g) black beans, drained and rinsed
- 1 cup frozen corn, defrosted
- 2 ripe avocados — for guacamole
- 1 lime, juiced
- 2 tbsp olive oil
- 1 tsp each: cumin, smoked paprika, garlic powder, chilli powder
- Salt and pepper to taste
- Fresh cilantro, sour cream and salsa to serve
👩🍳 Instructions
Mix cumin, smoked paprika, garlic powder, chilli powder, salt and pepper. Coat chicken evenly on all sides. Heat olive oil in a pan over medium-high heat.
Cook chicken 6–7 minutes per side until golden and cooked through. Rest 5 minutes then slice into strips. Meanwhile cook rice per packet instructions — stir in lime juice and chopped cilantro when done.
Make guacamole: mash avocado with lime juice, salt and a pinch of cumin. Warm black beans and corn in a small pan with a pinch of salt for 2–3 minutes.
Assemble bowls: rice base, then chicken, black beans, corn and guacamole side by side. Top with sour cream, salsa and extra cilantro. Serve immediately.
