Avocado Toast with Egg
Creamy smashed avocado on golden sourdough toast, topped with a perfectly poached egg and a pinch of chilli flakes. A classic healthy breakfast that’s satisfying, nutritious and ready in just 12 minutes.

๐ Ingredients
- 1 ripe avocado
- 2 slices sourdough bread
- 2 large eggs
- 1 tsp white vinegar (for poaching)
- ยฝ lemon, juiced
- Chilli flakes to taste
- Salt and black pepper
- Optional: microgreens or cherry tomatoes

Toast sourdough slices until deeply golden and crisp at the edges.
Halve the avocado, remove stone, scoop into a bowl. Add lemon juice, salt and pepper. Mash to your preferred texture.
Bring a small saucepan of water to a gentle simmer. Add white vinegar. Create a swirl with a spoon and gently slip in each egg. Poach for 3 minutes.
Spread avocado generously on toast. Top with drained poached egg, chilli flakes and a crack of black pepper.

The freshest eggs make the best poached eggs โ the whites hold together more neatly. For a runnier yolk, reduce poaching time to 2.5 minutes. Add a sprinkle of everything bagel seasoning instead of chilli flakes for a fun twist!
