🛒 Ingredients

  • 500g (1.1 lb) boneless chicken thighs or breast
  • 1.5 cups long grain white rice, rinsed
  • 1 can (400g) black beans, drained and rinsed
  • 1 cup frozen corn, defrosted
  • 2 ripe avocados — for guacamole
  • 1 lime, juiced
  • 2 tbsp olive oil
  • 1 tsp each: cumin, smoked paprika, garlic powder, chilli powder
  • Salt and pepper to taste
  • Fresh cilantro, sour cream and salsa to serve

Mix cumin, smoked paprika, garlic powder, chilli powder, salt and pepper. Coat chicken evenly on all sides. Heat olive oil in a pan over medium-high heat.

Cook chicken 6–7 minutes per side until golden and cooked through. Rest 5 minutes then slice into strips. Meanwhile cook rice per packet instructions — stir in lime juice and chopped cilantro when done.

Make guacamole: mash avocado with lime juice, salt and a pinch of cumin. Warm black beans and corn in a small pan with a pinch of salt for 2–3 minutes.

Assemble bowls: rice base, then chicken, black beans, corn and guacamole side by side. Top with sour cream, salsa and extra cilantro. Serve immediately.
