- 400g (14oz) pasta (penne or rigatoni)
- 2 large chicken breasts, thinly sliced
- 4 garlic cloves, minced
- 1 cup (240ml) heavy cream
- ½ cup (120ml) chicken stock
- 1 lemon — zest and juice
- ½ cup (50g) freshly grated parmesan
- 2 tbsp butter
- 2 tbsp olive oil
- Large handful baby spinach or arugula
- ½ tsp chilli flakes
- Salt, pepper, extra parmesan to serve
👩🍳 Instructions
Cook pasta in salted boiling water per package. Reserve 1 cup pasta water before draining.
Season sliced chicken with salt, pepper, chilli flakes. Heat olive oil, sear 3–4 minutes until golden. Remove.
Melt butter, add garlic 1 minute, add lemon zest 30 seconds.
Add stock, reduce by half. Add cream and lemon juice. Simmer 3–4 minutes until thickened.
Return chicken. Add pasta, toss to coat. Add pasta water to loosen sauce to your preferred consistency.
Off heat, add parmesan and spinach. Toss until wilted. Serve with extra parmesan and black pepper.
💡 Pro tip: Reserve pasta water before draining — every time. This starchy, salty water emulsifies fat and water into a silky, glossy sauce. A thin sauce transforms with 2–3 tablespoons. Plain water doesn’t do the same thing — the starch is everything.
