Grilled Chicken Rice Bowl
Juicy grilled chicken over fluffy brown rice with crunchy edamame, carrots and a savory sesame ginger dressing. A satisfying 420-calorie lunch that’s also brilliant for meal prep.

๐ Ingredients
- 2 chicken breasts (approx 150g each)
- 1 cup brown rice (dry)
- 1 cup edamame (shelled)
- 1 large carrot, julienned
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp honey
- 1 tsp fresh grated ginger
- Sesame seeds and spring onions to garnish

Cook brown rice according to package instructions. While rice cooks, prep your veggies.
Season chicken breasts with salt, pepper and a dash of sesame oil. Grill on medium-high heat for 6โ7 minutes each side until cooked through.
Whisk together soy sauce, sesame oil, honey and grated ginger to make the dressing.
Slice chicken and arrange over rice with edamame and carrots. Drizzle with dressing, top with sesame seeds and spring onions.
