For the Beef & Rice

500g (1.1 lb) beef mince (80/20) or thinly sliced ribeye
1.5 cups jasmine rice, rinsed
2.5 cups beef broth (low sodium)
1 tbsp sesame oil
1 medium onion, thinly sliced
3 spring onions, sliced (garnish)
1 tsp sesame seeds (garnish)
1 tsp gochugaru or chilli flakes (optional)

For the Bulgogi Marinade

4 tbsp soy sauce (or tamari for GF)
1 tbsp brown sugar or honey
1 tbsp sesame oil
5 cloves garlic, minced
1 tsp fresh ginger, grated
2 tbsp Asian pear or kiwi, grated (tenderiser)
1 tbsp mirin or rice wine (optional)
1 tsp black pepper

How to Make Easy Korean Beef Bulgogi Bowl

Make the bulgogi marinade

In a bowl combine soy sauce, brown sugar, sesame oil, garlic, ginger, grated Asian pear, mirin and black pepper. Whisk until sugar dissolves. Add beef and toss to coat. Marinate 10 minutes minimum โ€” or overnight in the fridge for deeper flavour.

Cook the beef

Heat sesame oil in a large heavy pot or wok over high heat. Add marinated beef in a single layer. Cook 3โ€“4 minutes without stirring to get caramelisation. Break apart and stir. Cook another 2 minutes until beef is cooked through and edges are sticky and golden.

Add onion

Push beef to the sides. Add sliced onion to the centre. Cook 2โ€“3 minutes until softened and slightly caramelised. Stir to combine with the beef.

Add rice and broth

Add rinsed jasmine rice to the pot. Pour in beef broth and stir once to combine everything. Scrape up any sticky bits from the bottom โ€” that’s flavour gold. Bring to a boil.

Simmer covered

Reduce heat to low. Cover tightly and cook 18 minutes. Do not lift the lid. The steam is what cooks the rice perfectly โ€” every peek adds 2 minutes to your cooking time!

Rest and garnish

Remove from heat. Rest covered for 5 minutes. Fluff with a fork. Top with spring onions, sesame seeds and gochugaru if using. Serve straight from the pot with kimchi on the side if you have it.
