Lean Beef Bolognese
Classic Italian bolognese made lighter with lean beef mince and vegetables sneaked in for extra nutrition. At 550 calories per serving with 38g of protein, this is comfort food you can actually feel good about eating.

๐ Ingredients
- 400g lean beef mince (5% fat)
- 300g wholewheat spaghetti
- 1 brown onion, finely diced
- 2 cloves garlic, minced
- 1 large carrot, grated
- 1 zucchini, grated
- 400g can crushed tomatoes
- 2 tbsp tomato paste
- 1 tsp Italian seasoning
- Salt, pepper and parmesan to serve
๐ฉโ๐ณ Instructions
Heat a large pan over high heat. Add beef mince and brown well, breaking up lumps. Drain any excess fat.
Add diced onion and garlic. Cook 3 minutes until softened. Add grated carrot and zucchini โ stir and cook 2 more minutes.
Stir in tomato paste, cook 1 minute. Add crushed tomatoes and Italian seasoning. Reduce heat and simmer 15 minutes.
Cook wholewheat spaghetti until al dente. Drain, reserving a cup of pasta water. Toss pasta with sauce, adding pasta water to loosen. Serve with parmesan.
