MOUSSE: Melt chocolate over simmering water. Cool 5 minutes — should feel warm, not hot.
Whisk egg yolks and 2 tbsp sugar until pale and thick. Fold into warm chocolate in three additions.
Beat egg whites to firm glossy peaks with remaining sugar and salt. Whip cream to soft peaks separately.
Fold cream into chocolate, then egg whites in two additions with a light hand. Divide into glasses. Chill minimum 3 hours.
LEMON POSSET: Simmer cream and sugar, stirring. Boil gently exactly 3 minutes.
Remove from heat, stir in lemon zest and juice. Strain into glasses. Cool 20 minutes, then refrigerate 3–4 hours until set. Top with berries.
