Tuna Avocado Wrap
Flaked tuna mixed with creamy avocado, lemon and crunchy cucumber, wrapped in a soft whole wheat tortilla. A filling 390-calorie lunch ready in just 10 minutes β perfect for the office or on the go.

π Ingredients
- 1 large whole wheat tortilla
- 1 can (185g) tuna in spring water, drained
- Β½ ripe avocado
- ΒΌ cucumber, thinly sliced
- Β½ lemon, juiced
- 1 tbsp plain Greek yogurt
- Salt and black pepper
- Optional: mixed greens or baby spinach

Drain tuna well. In a bowl, mash avocado with a fork. Mix in tuna, lemon juice and Greek yogurt until combined.
Season the tuna-avo mixture generously with salt and pepper.
Lay tortilla flat on a board. Layer mixed greens in the centre, then spoon tuna mixture on top.
Add cucumber slices. Fold in the sides, then roll tightly from the bottom. Slice diagonally and serve.
π‘ Pro Tips
Wrap tightly in foil or cling film if packing for lunch β it holds together much better. Keep the avocado mix separate from the tortilla until ready to eat to prevent sogginess. Add a dash of hot sauce for a kick!
