  • ½ cup (115g) unsalted butter
  • 1 cup (200g) granulated sugar
  • 3 large eggs + 1 extra yolk
  • 1 tsp vanilla extract
  • ¾ cup (95g) plain flour
  • ¼ cup (25g) cocoa powder
  • ½ tsp salt
  • Optional: chopped walnuts, chocolate chips, peanut butter swirl
  • NO-BAKE: 1 cup oats + ½ cup nut butter + ¼ cup honey + ¼ cup chocolate chips

Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper, leaving overhang for easy lifting.

Melt butter and chocolate together in 30-second microwave bursts, stirring between each. Cool 5 minutes.

Whisk sugar into chocolate. Add eggs and yolk one at a time, whisking after each. Add vanilla. The batter should look glossy.

Sift in flour, cocoa, and salt. Fold gently until just combined — no dry flour visible. Do not overmix (overmixing = cakey, not fudgy).

Pour into prepared pan. Bake 22–25 minutes. Edges set, centre still jiggles slightly — this is correct. It firms as it cools.

Cool completely in pan (1 hour minimum) before lifting out and slicing. For clean cuts, wipe knife between slices.
