- 200g (7oz) dark chocolate (70%+ cocoa)
- ½ cup (115g) unsalted butter
- 1 cup (200g) granulated sugar
- 3 large eggs + 1 extra yolk
- 1 tsp vanilla extract
- ¾ cup (95g) plain flour
- ¼ cup (25g) cocoa powder
- ½ tsp salt
- Optional: chopped walnuts, chocolate chips, peanut butter swirl
- NO-BAKE: 1 cup oats + ½ cup nut butter + ¼ cup honey + ¼ cup chocolate chips
👩🍳 Instructions
Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment paper, leaving overhang for easy lifting.
Melt butter and chocolate together in 30-second microwave bursts, stirring between each. Cool 5 minutes.
Whisk sugar into chocolate. Add eggs and yolk one at a time, whisking after each. Add vanilla. The batter should look glossy.
Sift in flour, cocoa, and salt. Fold gently until just combined — no dry flour visible. Do not overmix (overmixing = cakey, not fudgy).
Pour into prepared pan. Bake 22–25 minutes. Edges set, centre still jiggles slightly — this is correct. It firms as it cools.
Cool completely in pan (1 hour minimum) before lifting out and slicing. For clean cuts, wipe knife between slices.
💡 Pro tip: Pull brownies from the oven while the centre still looks slightly underdone. They continue cooking from residual heat. A toothpick should come out with moist crumbs — not clean (clean = overbaked). The extra egg yolk adds richness without making them cakey.
